Chocolate & Production
What does bean-to-bar mean?
Bean-to-bar means exactly that: from the cocoa bean to the finished chocolate bar. Instead of buying ready-made chocolate, we process the cocoa beans ourselves and guide our chocolate through every key stage of production.
We roast, crack, grind, conche, temper and mould our chocolate ourselves. This allows us to adapt the process to the characteristics of each cocoa bean and bring out its individual flavour.

Where is Taucherli chocolate made?
Our chocolate is made in our own manufactory just outside Zurich, Switzerland. This is where we transform cocoa beans into Taucherli chocolate, from bean to finished bar, all under one roof.
What is single-origin chocolate?
Single origin means that the cocoa used comes from one specific origin. With our Fine Flavour chocolates, this origin takes centre stage.
Just like with wine or coffee, climate, soil, cocoa variety, fermentation and harvest can all influence flavour. That’s why cocoa from different origins can develop completely different flavours, without any added flavourings.
What does conching mean?
During conching, the chocolate is continuously mixed, aerated and refined over an extended period of time. This helps develop its characteristic texture and flavour profile. How long we conche depends, among other things, on the cocoa and the flavour we want to achieve.
What does tempering mean?
Tempering is one of the final steps before the chocolate is moulded. The chocolate is carefully heated and cooled in a controlled process. This gives it its beautiful shine, satisfying snap and smooth melt.
Cocoa, Origin & Sustainability
Where does your cocoa come from?
Our cocoa comes from different growing regions around the equator. Depending on the chocolate, we work with different farms and cooperatives.
We’re interested not only in where our cocoa beans come from, but also in the people behind them and the conditions under which the cocoa is grown.
Do you know where your cocoa beans come from?
Yes. Transparency about the origin of our cocoa is an important part of bean-to-bar for us. We want to know where our cocoa beans grow and who produces them. All our chocolates are single-origin chocolates.
What does Taucherli do when it comes to sustainability?
For us, sustainability begins long before the finished chocolate bar. It includes the origin of our ingredients, how we work with the people behind our cocoa, how it is grown and the decisions we make during production.
We focus on long-term relationships, fair conditions and transparent supply chains. At the same time, we know that sustainability isn’t something you simply achieve once and for all. That’s why we continuously question and improve the way we work.

Is your chocolate Fairtrade certified?
Not every fair and transparent supply chain automatically carries a Fairtrade label. What matters to us is knowing where our cocoa beans come from, building relationships with our partners and supporting fair prices and conditions.
Where individual products or ingredients are certified, you’ll find this information directly on the relevant product page.
Ingredients, Diet & Allergens
Is Taucherli chocolate vegan?
A large part of our range is vegan. This includes our Fine Flavour collection as well as all our dark chocolates.
The best way to check whether a product is vegan is to look at the label and ingredient list on the relevant product page.

Does your chocolate contain allergens?
Depending on the product, it may contain allergens such as milk, nuts or gluten, or traces of other allergens.
As we make different products in our manufactory, please always check the current ingredients and allergen information on the packaging or the relevant product page.
Is your chocolate organic?
A large part of our range and many of our ingredients are certified organic. You’ll find information on whether a specific product is certified organic directly on the packaging and the relevant product page.
Storage & Enjoyment
What’s the best way to store Taucherli chocolate?
Chocolate likes it cool, dry and dark, but not ice-cold. Store it at a consistent temperature and keep it away from direct sunlight, moisture and strong odours.
The fridge usually isn’t the best place for good chocolate, as cold temperatures, moisture and temperature fluctuations can affect its flavour and appearance.
My chocolate has a white coating. Is it still safe to eat?
A pale or whitish coating can appear when chocolate has been exposed to significant temperature fluctuations. This can cause fat or sugar to rise to the surface.
It might not look quite as sexy, but it doesn’t automatically mean the chocolate has gone bad. Its flavour and texture may be affected, though.
How long does Taucherli chocolate keep?
You’ll find the best-before date on the packaging. When stored correctly, chocolate keeps for a long time. We still think it tastes best fresh from our manufactory.
